Table Beer

A light pale ale featuring malted barley and rolled oats, created in 2012 to deliver character despite low alcohol content. An elevated mash temperature creates long-chain sugars that resist fermentation, adding body, while the oat addition provides fuller mouthfeel preventing thinness. Hop varieties rotate based on seasonal availability and brewer preference.

Dry Stout

Light-bodied stout using malted barley and oats with kettle and dry-hopping to contrast roasty, biscuity character with brightness. A sessionable dark beer that balances roast with drinkability.

Pale Ale

Dry, light-bodied offering using malted barley with rotating hop varieties chosen by seasonality and brewer preference to highlight individual hop characteristics. Secondary fermentation in the bottle adds gentle carbonation.

India Pale Ale

Fuller-bodied malted barley beer with greater hop intensity than the pale ale while maintaining balanced elements across batches. Like all our bottle-conditioned beers, the IPA undergoes secondary fermentation, developing additional complexity over time.

London Brick

A malted barley and rye blend. A bold, characterful beer combining the spicy, slightly dry character of rye with hop-forward aromatics.

Foeder Beer

A hybrid combining saison and pale ale elements, fermented in 4,000-litre oak vessels with Belgian yeast and house culture, then dry-hopped for intensified aroma. The oak contributes subtle vanilla and tannic notes without dominating, while the mixed culture adds gentle funk and acidity.

London Sour

Kettle-acidified with lactobacillus bacteria then fermented with yeast, producing bright, lemony acidity. Occasionally dry-hopped or fruit-re-fermented for additional complexity.

Bière de Saison

Mixed-fermentation blend using yeast and bacteria in oak barrels, creating dry complexity with varying batch-specific profiles and optional hop or fruit additions. A living beer that evolves beautifully with age.

Brett Pale Ale

Begins with Californian ale yeast before being inoculated with Brettanomyces. The wild yeast adds layers of complexity — fruit, earth, and a distinctive farmhouse quality that becomes progressively drier with age.

Export India Porter

Based on an 1855 Barclay Perkins recipe, tempered with chocolate and crystal malts, hopped aggressively to bring lightness and fruit to the dark brown base. A historic style reimagined for contemporary drinkers.

India Double Porter

A high hop-bill dark beer described as a Double IPA of Porters, using intense roast with dry-hop brightness and lingering bitterness. Waves of roast, chocolate, and aromatic hops.

Export Stout London 1890

Based on an 1890 Truman Brewery recipe. A black, oily beer featuring dried fruit, alcohol warmth, and herbal hop bitterness with an espresso finish.

Imperial Brown Stout London 1856

A Barclay Perkins archive recipe — actually black, not brown — that evolved into the Russian Imperial Stout tradition. Features coffee and cocoa aroma progressing to dried fruits. A powerful, contemplative beer for slow sipping.

Brown Ale

Medium-bodied blend between Northern English and American styles using malted barley and oats with toasted nuts, caramel, and beech-smoked malt.

A London Porter

Based on a 1896 Whitbread's Brewery formula. Brewed with Maris Otter, Brown, Black, Amber, and Crystal malts with East Kent Goldings hops. The heavy brown malt imparts spice, smoke, and leather, while black malt added during the boil enhances roast and coffee character.

Baltic Porter

Lager-fermented cousin to the India Double Porter, smoothed through low-temperature yeast fermentation. Created during the 2020 lockdown, combining the depth of a porter with the clean finish of a lager.

Pils

A regular lager offering emphasizing hop character through rotating varieties with a bitter, dry-hopped profile. Each brew features different hops to create a unique pilsner experience.

Foeder Lager

First lager produced at the end of 2019, fermented in oak foeder at low temperature with light dry-hopping. The wood adds subtle complexity and a gentle tannic edge.

Slightly drier and more bitter than traditional dunkel, lightly dry-hopped to preserve malt flavors while adding a modern accent.
